Fruit Pizza Cookies (Amazingly Delicious!)
These Fruit Pizza Cookies are a crowd pleasing treat! A perfectly tender sugar cookie base, tangy cream cheese frosting, and juicy fresh fruit come together in one heavenly bite! Plus they can be served already assembled or allow each person to customize their own.

Cookies
- ½ cup butter softened
- ¾ cup sugar
- 1 egg
- 1½ cups flour
- 1 teaspoon cream of tartar
- ½ teaspoon baking soda
- ¼ tsp salt
Frosting
- 8 oz cream cheese softened
- ½ cup sugar
- 2 teaspoon vanilla
Fresh Fruit
- 3 cups fresh fruit of your choice (berries, banana, kiwi, pineapple, tangerine, peaches, nectarines, grapes, mango, etc.)
Cookies
Preheat oven to 350°. Line cookie sheet with parchment.
In a small bowl whisk together flour, baking soda, salt, and cream of tarter.

In a stand mixer or with hand beaters, beat butter and sugar until light and fluffy, approximately 2 minutes.

Add in egg and beat for another minute.

Add dry ingredients to the bowl. Mix until just combined. Gather the dough into a ball and transfer to lightly floured counter or board.
Gently pat dough into a rectangle, and then finish rolling it out until it is ¼ inch tall. Using a round cookie cutter, cut out as many circles as you can. Transfer cut-outs to the cookie sheet. Gently gather up the scraps and repeat until all the dough is used.
Bake for 9-10 minutes or until slightly puffy and the edges are very lightly golden. If you are cooking multiple sheets at once, be sure to rotate halfway through. Allow to cool on a cookie sheet until completely cool.
Frosting
Place cream cheese, sugar, and vanilla in a bowl. Beat on medium speed for 2 minutes or until light and fluffy.
8 oz cream cheese, ½ cup sugar, 2 teaspoon vanilla
Tips & Tricks
- Be super gentle with the dough once the flour has been added to ensure a tender cookie.
- Do not overbake. The cookies will become hard and they need to be soft and chewy.
- Cut all the fruit to approximately the same size. And make sure they are small enough to easily fit on the cookie.
- To keep the fruit pizzas from being soggy, be sure to assemble just before serving or allow people to assemble their own.
Freezer Tips
You can freeze the dough already cut out in circles. Just add 1-2 minutes to the baking time.
Prep Ahead
The best way to prep ahead is to have the bases cut and in the freezer up to a month in advance. Make the filling and store it in the fridge for up to 5 days. Most of the fruit is best if cut on the day of. Bananas shouldn’t be cut until the moment you want to serve because they turn brown very quickly.
