Flatbread Pizza with Chili Oil Recipe

If you haven't hopped on the Store Bought Flatbread Pizza trend, I'm here to convince you. This version is made with the pre-cooked Trader Joe's Pizza Crust (or your favorite brand!) and topped with gooey mozzarella, sweet cherry tomatoes, fresh chives, and a generous drizzle of chili oil! In this post I'm sharing all the tips and variations I've picked up after making this many times on my own.

  • 1 pckg Trader joe’s pre-cooked rectangle pizza crust *See note
  • 1-2 tablespoon olive oil
  • 1 teaspoon lemon zest optional
  • 1 tablespoon garlic minced
  • 8 oz (2 ¼ cups) mozzarella cheese shredded
  • 5 oz cherry tomatoes cut into quarters
  • ½ teaspoon dried oregano
  • ¼ cup Parmesan or pecorino cheese freshly grated
  • 2-3 tablespoon chili crisp
  • 1 tablespoon fresh chives diced

Instructions

  • Preheat oven to 425 degrees (**see note).
  • Use a silicone or pastry brush to brush the top and bottom of both pizza crusts with a light layer of olive oil. Place the crusts on a cookie sheet (they will slightly overlap or hang off the edge for a regular sheet, or fit with room to spare on a on XL sheet).

  • Sprinkle the minced garlic and lemon zest evenly across the crusts.

  • Layer on the mozzarella cheese, then cherry tomatoes, and lastly dried oregano.
    8 oz (2 ¼ cups) mozzarella cheese, 5 oz cherry tomatoes, ½ teaspoon dried oregano
  • Bake for 10-12 minutes, or until the cheese is melty and the edges are crisp.
  • Top with freshly grated parmesan or pecorino, drizzle on the chili crisp oil, and sprinkle with fresh chives. Slice and serve immediately.

Notes

*We use the Trader Joe's pre-cooked rectangular pizza crusts for this recipe, which comes with two crusts in one package. See the photo in the post above for the specific product. You can use a different brand of pre-made crust, just know that the quantities for this recipe are based on the size of the TJ's crust, so you may need to adjust your amounts slightly if using a different product. 
**You can make this in a convection oven if yours is large enough to fit a sheet pan, or you can cut the pizza crusts in halves and bake it in rounds. If using a convection oven, preheat to 375°F. I have done this successfully in my Breville Smart Oven. 
 
Tips & Tricks
  • When it comes to cheese, it's really worth it to buy quality brands. We love Tillamook mozzarella and real parmesan cheese (not the powdered stuff) for this recipe. 
  • For the best melt and texture, shred the mozzarella fresh instead of purchasing pre-shredded cheese (pre-shredded cheese comes coated in other ingredients that impact the final results). 
  • Choose a chili oil that you really love the flavor of. Every brand is different, and since it is a key flavor it's important that you love it. 
 
Storage: Store leftovers in an airtight container in the fridge for 3-5 days. Allow it to cool before storing to reduce condensation. 
 
Reheating: This flatbread is best served fresh. If you must reheat it, here are two options to restore the crust as much as possible, although it will not be as crispy. With both options, watch it carefully to avoid burning. 
  • Option 1: Preheat the oven to 425°F. Place a cookie sheet inside to get hot. Once preheated, place the pizza directly on the hot pan and bake in the oven for 5-8 minutes, until heated through. 
  • Option 2: Heat a large skillet on the stove over medium-high heat. Place slices of pizza directly in the hot pan and cover with a lid, until the toppings are warmed through. Remove the lid and allow it to continue cooking for 1-2 minutes, if needed, until the bottom is slightly crispy.
