Honey Chipotle Wings

I have spent 30 years looking for the kinds of recipes that are so delicious it makes people want to eat them on repeat. These Honey Chipotle Wings are one of those recipes. Simple, crispy grilled chicken wings (with an oven-baked option, too) get tossed in the most crazy amazing honey chipotle sauce. It is an irresistible sweet, smoky, slightly spicy mix that is so darn good!

Ingredients

Honey Chipotle Sauce

  • 2 tablespoons butter melted
  • 2 tablespoons honey
  • 1 teaspoon chipotle chili powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon oregano
  • ¼ teaspoon cumin

Chicken Wings

  • 4 lbs chicken wings about 18-20 pieces
  • tablespoons baking powder aluminum-free
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • Oil for the grill grates

Instructions

  • Preheat the grill to medium-high heat.
  • Make the honey chipotle sauce by combining the ingredients in a large bowl. Set aside.
    2 tablespoons butter, 2 tablespoons honey, 1 teaspoon chipotle chili powder, ¼ teaspoon smoked paprika, ¼ teaspoon oregano, ¼ teaspoon cumin
  • Use paper towels to pat the chicken wings as dry as possible. Toss into a large bowl, then add baking powder, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well to coat the wings in the seasoning mixture.
    4 lbs chicken wings, 1½ tablespoons baking powder, ½ teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon kosher salt, ⅛ teaspoon black pepper
  • Coat the grill grates with a thin layer of oil. Place the wings on the grill for 10 minutes on the first side. Check after about 5-6 minutes to see if there are any hot spots and move them around the grill to cooler/hotter spots as needed. Flip and grill for 10 more minutes on the second side, or until cooked through.

  • When the wings are done, use tongs to gently pull them off.
  • Place the wings in the bowl and pour the sauce on top, then toss to coat. Serve immediately

Notes

Tips & Tricks
  • Be sure to really dry the wings thoroughly, then toss with the baking powder and seasonings just before grilling.
  • Grills usually have hot spots, so you might need to move them around if the heat on the grill is uneven. 
  • The amount of sauce called for gives plenty of flavor, but for the photos we used a little extra sauce for drizzling. If you want extra saucy wings, double the ingredients for the sauce.
 
Make-Ahead Options
These are best served fresh, but the seasonings and baking powder can be combined ahead and kept separate. The sauce can be made up to 5 days ahead and kept in the refrigerator.
