- 1 lb brussels sprouts halved
- 2.5 tablespoon olive oil
- ½ teaspoon kosher salt
- Sprinkle pepper
- ½ walnuts very roughly chopped or broken with hands
- 2 teaspoon dijon mustard
- 2.5 tablespoon maple syrup
- ⅓ cup dried cranberries
Preheat oven to 425℉.
Place brussels on an 2 sheet pans or on one extra large sheet pan - cut side down. Drizzle with oil, salt, and pepper. Roast for 15-20 minutes, or until the cut sides are golden and the leaves are crispy.

Remove from the oven. Add the walnuts, mustard, and maple syrup. Stir well, then bake for another 4-5 minutes.

Tips & Tricks
- Try to choose small to medium size sprouts. Keeping them even helps them to roast evenly.
- Really small ones might need less cooking time.
- Don't over crowd the baking pan or the oven or these will steam instead of roast.
