  • 1 lb brussels sprouts halved
  • 2.5 tablespoon olive oil
  • ½ teaspoon kosher salt
  • Sprinkle pepper
  • ½ walnuts very roughly chopped or broken with hands
  • 2 teaspoon dijon mustard
  • 2.5 tablespoon maple syrup
  • cup dried cranberries

Instructions

  • Preheat oven to 425℉.
  • Place brussels on an 2 sheet pans or on one extra large sheet pan - cut side down. Drizzle with oil, salt, and pepper. Roast for 15-20 minutes, or until the cut sides are golden and the leaves are crispy.

  • Remove from the oven. Add the walnuts, mustard, and maple syrup. Stir well, then bake for another 4-5 minutes.

  • Add the cranberries, toss, and serve hot.

Notes

Tips & Tricks
  • Try to choose small to medium size sprouts. Keeping them even helps them to roast evenly.
  • Really small ones might need less cooking time.
  • Don't over crowd the baking pan or the oven or these will steam instead of roast.
