Tasty Mexican Salad Recipe (with easy dressing!)
This dreamy Mexican Salad Recipe is the tastiest way to load up on veggies and legumes! Dressing
- 1 cup mayo or ½ mayo and ½ greek yogurt
- ½-1 cup milk or buttermilk
- Juice of one lime about 3 tablespoons
- ½ small jalapeno seeds removed if desired
- 2 tomatillos
- ½ bunch cilantro
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1 teaspoon dried chives
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- Pinch black pepper
Salad
- 1-2 romaine hearts chopped - about 6 cups
- 1 cup cherry tomatoes sliced
- ½ cup black beans drained
- ¼ cup roasted corn thawed
- 1 avocado diced
- ¼ cup red onion diced
- ¼ cup cilantro leaves only
- ¼ cup pepitas
- 1 cup monterey jack or pepper jack cheese shredded
- Tortilla strips optional
Dressing
Place ingredients for dressing in a blender and blend for 30 secs to 1 minute until evenly combined. Pour into a jar and store in the fridge until ready to use.

Tips & Tricks
- Dice the avocado just before serving to ensure that it doesn't brown.
