- 2 lb large carrots
- 4 tablespoon butter
- 1 tablespoon garlic minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon pepper
- ⅓ cup parmesan 0.7 oz
- Fresh parsley optional, for serving
Preheat the oven to 425. Pull out a sheet pan (*see note)
Peel and slice the carrots into diagonals ¼ inch thick.
2 lb large carrots
Melt the butter in a medium bowl. Add all the remaining sauce ingredients to the bowl. Add the carrots and toss to coat evenly.
4 tablespoon butter, 1 tablespoon garlic, 1 teaspoon Italian seasoning, ½ teaspoon salt, ¼ teaspoon pepper, ⅓ cup parmesan
Spread in a single layer on the sheet pan. Roast for 20-25 minutes, until tender and turning golden brown. Sprinkle with fresh parsley if desired, then serve immediately.

Sheet Pan Notes: You will get the most browning if they are in a very flat layer (no overlap). Depending on the size of the carrots, sometimes they fit on one sheet pan perfectly and other times it's a bit too much for one pan. You can use two sheet pans if needed, or we love to use an extra large sheet pan. In general, the more space the veggies have, the better they will roast.
Tips & Tricks
- Cut the carrots as evenly as possible.
- For more color, broil them for 2-3 minutes at the end.
- Use really good parmesan cheese as this is a dominate flavor
