Parmesan garlic roasted carrots ingredients

With only 5 main ingredients this recipe is easy to whip together!

Roasted carrot ingredients including whole carrots, butter, minced garlic, salt, pepper, Italian seasoning, parmesan cheese, and fresh parsley.
  • Whole carrots: Medium sized carrots produce the best sized rounds, but any size will work.
  • Butter: Salted butter is our go-to.
  • Garlic: Minced garlic is a shortcut ingredient I like to have on hand, but feel free to mince a couple whole cloves.
  • Seasonings: Salt and pepper, of course, but also a little bit of Italian seasoning to amp up the flavor.
  • Parmesan cheese: The real stuff is necessary here. We like to grate it ourselves. We can't recommend the stuff in the green can.

How to make garlic parmesan roasted carrots

This super simple side dish requires very little chopping and lots of delicious eating! Let's get to it.

Slice the carrots as evenly as possible into rounds. We prefer the look and surface area that is available when slicing them slightly on the bias or diagonally.

In a bowl add the melted butter, garlic, salt and pepper. Give a good stir, then add in the parmesan cheese.

Add the carrots and the butter sauce to a bowl and mix until everything is evenly and thoroughly combined.

Spread out onto a baking sheet and roast at 425 degrees for 20-25 minutes. They will tender and soft with golden brown edges.

Hint: Do not overcrowd the sheet pan as it will make the carrots steam instead of roast. Whenever possible, I prefer to use this XL baking sheet for recipes like this one.

Can I use baby carrots for this recipe?

While baby carrot can be used, we recommend using whole carrots due to a better texture in the final profile. Baby carrots come in various sizes. If yours are on the larger side, slice them in half longways and make sure the flat side is on the sheet pan.

FAQs

Do you have to boil carrots before roasting?

No, carrots do not need to be boiled before they are roasted. They key to tender carrots is to pick fresh carrots and slice then thinly and evenly. That way the inside is tender at the same time that the outer edge is getting caramelized.

Why won't my roasted carrots get tender?

If the carrots have been sliced too thickly they may not want to get tender. If you find this is the case, cover the sheet pan tightly with foil and place in the oven. The steam that develops will softened them. Check them every 5 minutes to ensure they do not overcook and become mushy.

Ingredients

  • 2 lb large carrots
  • 4 tablespoon butter
  • 1 tablespoon garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ⅓ cup parmesan 0.7 oz
  • Fresh parsley optional, for serving

Instructions

  • Preheat the oven to 425. Pull out a sheet pan (*see note)
  • Peel and slice the carrots into diagonals ¼ inch thick.
    2 lb large carrots
  • Melt the butter in a medium bowl. Add all the remaining sauce ingredients to the bowl. Add the carrots and toss to coat evenly.
    4 tablespoon butter, 1 tablespoon garlic, 1 teaspoon Italian seasoning, ½ teaspoon salt, ¼ teaspoon pepper, ⅓ cup parmesan
  • Spread in a single layer on the sheet pan. Roast for 20-25 minutes, until tender and turning golden brown. Sprinkle with fresh parsley if desired, then serve immediately.

Notes

Sheet Pan Notes: You will get the most browning if they are in a very flat layer (no overlap). Depending on the size of the carrots, sometimes they fit on one sheet pan perfectly and other times it's a bit too much for one pan. You can use two sheet pans if needed, or we love to use an extra large sheet pan. In general, the more space the veggies have, the better they will roast.
