These Hash Browns In The Oven are the ultimate easy breakfast win. After cooking breakfast for seven hungry mouths for over 20 years, I can tell you this one's a keeper! With 4 simple ingredients, including frozen shredded potatoes, these bake up perfectly crispy right on a sheet pan. No fuss, no flipping - just golden, crunchy hash browns that are perfect for breakfast, brunch, or even breakfast-for-dinner.

The idea of grabbing a bag of frozen hash browns, tossing them in the oven, and pulling out perfectly crispy potatoes ready to serve the crowd? It is mealtime magic. The kind of mostly hand-off win every busy cook dreams of.

I tested at least 10 rounds of different methods and different ratios of ingredients before landing on the one that actually works. Too high an oven temp or too long means they are like chips, but too low or too much oil means they are soggy. So I kept making batches until I finally struck the perfect balance.

Oven hash brown ingredients

This recipe only needs four ingredients! Bonus, all are easy to have on hand so you can whip these up whenever the need for crispy potatoes strikes.

  • Frozen shredded hash brown potatoes: I used several brands and they all performed about the same.
  • Oil: Olive oil or avocado oil are our preferences, but canola oil or vegetable oil also work.
  • Salt: Kosher salt is our go-to for its perfectly salty flavor.
  • Pepper: Just classic ground black pepper is needed.

How to make hash browns in the oven

Preheat the oven to 400 degrees. Let it sit at 400 degrees for at least 10 minutes to allow it to get consistently hot before putting in the potatoes. This prevents them from steaming and allows them to get crispy.

Spread out a 30 ounce bag of frozen shredded potatoes on a sheet pan. Spread into as single layer as possible.

Season with salt and pepper, then pour the oil over the top. Take a minute to stir together really well.

Spread out into a single layer. This is a key point in helping them get crispy.

Place the pan in the oven. They are going to cook at this temperature for 40 minutes, stirring every 10 minutes.

Every time you stir them, make sure to spread out as thin a single layer as you can before popping them back in the oven.

Once they have cooked for 40 minutes, and have been stirred 4 times, up the oven temperature to 450 degrees for the final 10 minutes. Serve warm.

Hint: A regular-sized baking sheet (13x18 inches) is how we did all our testing but if you happen to own an extra large sheet pan (around 21x15 inches), these will get even more crispy.

Variations and substitutions

  • Add garlic powder or onion powder for a savory boost.
  • Swap the salt for Tony's Creole Seasoning for extra flavor.
  • Use seasoned salt for a classic flavor combination.
  • Sprinkle on some dried herbs like parsley, rosemary or thyme in the last half of cooking.
  • Finish with a tablespoon of freshly chopped herbs like chives or parsley after removing from the oven.

What to serve with sheet pan hash browns

For a full breakfast try:

How to store

Store any leftovers in an airtight container in the refrigerator for up to 5 days. For best results when reheating, gently warm in a skillet. You can microwave them but they might be a little soft.

FAQs

How long do I bake hash brown in the oven?

It takes about 40-50 minutes for oven hash browns to get truly crispy. At 400ºF they don't get quite crispy enough, at 425ºF the edges dry out before the center cooks through, and at 450ºF they dry out without really being crispy. We landed at 400ºF for the first rounds and finishing at 450ºF for the final 10 minutes for the balance between crispiness and tenderness.

Why are my hash browns bland?

Hash browns, like all potatoes, really soak up the flavor. This means they need adequate seasoning or else they will be plain. Make sure to use really good salt and really flavored oil like olive oil to allow them to really shine.

Ingredients

  • 30 ounce bag of frozen shredded hash brown potatoes
  • ⅔ cup oil
  • 2 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  • Preheat oven to 400ºF. Let it sit at 400ºF for at least 10 minutes. While it is heating, spread potatoes on a sheet pan.
  • Put the frozen potatoes onto the sheet pan. Add the oil, salt, and pepper to the potatoes and mix well.
  • Spread the potatoes back out into a single layer (this part really matters for crispiness). Bake at 400°F for 40 minutes, stirring every 10 minutes.
  • After the 40 minutes and four stirs, increase the oven temperature to 450°F for a final 10 minutes. Each time you stir, make sure to spread the potatoes back into a thin, even layer.
