Why this recipe is great
- Good anytime of year! You get that classic summertime flavor without having to mess with setting up a fire.
- These gooey treats are packed with extra marshmallows, graham flavor, and melty chunks of rich chocolate. Absolutely yummy!
- Super easy! Just brown the butter (totally worth it), then mix everything together and press it in the pan.
S'mores rice krispie treat ingredients
Just 6 ingredients for this easy dessert. That's a win!

- Marshmallows: Mini marshmallows are the best option because they melt easiest. If using large or jumbo marshmallows, cut them into pieces before using.
- Rice cripsy cereal: Your favorite brand works fine.
- Grahams: The options here are graham crackers or graham cereal. We prefer the cereal but this it total your preference.
- Chocolate: Milk chocolate is the classic type, but dark chocolate is delicious as well.
- Vanilla: Pure vanilla extract brings everything together.
- Butter: Salted butter provides the best taste.
- Salt: Just a pinch to round out the flavors.
How to make s'mores rice krispie treats
Get your 9x13 pan ready by giving it a quick spray with nonstick baking spray or rubbing a little oil around with a paper towel.
Next, toss the graham cereal or crackers into a gallon-sized ziptop bag. Use a measuring cup or rolling pin to gently smash them into chunky, uneven pieces - no need to go overboard, you want some good texture.

This recipe begins with the ultimate ingredient: brown butter.
Melt the butter stirring frequently until the foam subsides and the butter begins to get nutty and toasty brown in color. For a full tutorial, see How To Brown Butter.

Turn the heat to low and add in the marshmallows, vanilla, and salt.

Use a rubber spatula to stir until the ingredients form a marshmallow creme.
There might be a couple left unmelted but overall the mixture should be mostly smooth.

Add the 3 ounces of mini marshmallows, rice krispies, and graham pieces. Stir gently but thoroughly. Be careful not to over mix.

Pour into the prepared pan and using the rubber spatula, press gently. If you press too hard it make them lose their gooey texture.

Sprinkle with the remaining 1 ounce of marshmallows. Optional: These can be broiled for that toasted marshmallow flavor, but we found that it can make the top a little crunchy.
After this, place the extra chunks of chocolate and graham pieces around in a random pattern.
Hint: Grease everything that's going to touch the sticky marshmallow mix-your spoon, spatula, even your hands if needed. Then as soon as you're done, toss all the dishes into super hot water. Trust me, these two little tricks make making Rice Krispie treats way easier (and way more enjoyable).
Variations and substitutions
- Substitute with dark chocolate if you prefer.
- Both the cereal and graham crackers work. Totally preference!
- Try cut up peanut butter cups in place of the regular chocolate. This is my favorite s'more flavor!
How to cut rice krispies
Just like our other rice krispie recipes, these can be cut into straight lines for serving, but rough cuts taste just as delicious so no need to bother unless presentation is important. Our top tips are:
- Allow them to cool to room temperature.
- Choose the correct tools: A ruler and this knife (by far my favorite).
- Spray your tools with nonstick spray.
How to store
Store leftovers at room temperature for up to 5 days. The more airtight the container the longer they will stay fresh. To ensure freshness, consider wrapping each piece in plastic wrap before putting in the container of your choice.
If stacking inside a container, use wax paper or parchment paper to ensure they don't stick to each other.

FAQs
If your treats turn out too hard, it's usually because the marshmallows got cooked on too high of heat or for too long. Another common culprit? Pressing the mixture too firmly into the pan. Keep it gentle and low temp for soft, gooey squares.
In our opinion, these are absolutely amazing while they're still warm - so gooey and delicious! Just keep in mind they won't slice into nice, clean squares until they've cooled. Give them about an hour at room temp if you want them to look pretty.

Tips & tricks
- Work quickly. Once it cools even a bit, it gets really hard to handle and mold.
- Use fresh marshmallows!
- Broiling is optional. They look cute, but will get a crispier layer on top that is a bit tougher to cut through.
- To get them perfectly flat, you can spray a piece of plastic wrap lightly with non-stick spray. Lay it across the rice krispie treats and finish pressing with a flat-bottomed measuring cup until they are even. Don't press too firmly or it will make them tough and hard.
- Spray rubber spatula with nonstick spray or wipe with oil to keep it from sticking and slowing down the process.
