Prep the mini cupcake pan by spraying it generously with nonstick spray. If you only have one muffin pan keep the second piece of puff pastry in the refrigerator until it is time to bake the second batch.
Lightly flour a flat surface. Carefully unfold thawed puff pastry. Using a rolling pin gently roll the pastry sheet out to 10x12 inches. Cut into 24 pieces by cutting into 4 equal pieces longways and 6 even pieces going the short way.
Place one sheet of puff pastry into each cup of the mini muffin tin. Prick the bottom of each piece of dough with a fork three times. Place one cube of the creamy brie cheese in each spot and fill with ½ teaspoon of jam.
