- Plus maximum flavor in the shortest amount of time since the jalapenos and salty bacon cook together in the oven. Baking bacon in the oven is my favorite no mess method.
🥚 Ingredients
A full list and ingredient quantities are in the recipe card below, but here are a few noteworthy tips:
- Hard-boiled eggs: Cook using your favorite method, mine is the Instant Pot, or for a shortcut option buy eggs that are already hard boiled from the grocery store.
- Bacon: The addition of bacon imparts a ton of flavor, especially thick-cut hardwood smoked bacon.
- Jalapenos: Start with fresh jalapenos and bake them in the oven to mellow the heat and soften the texture. Pickled jalapenos impart too sharp of a flavor which is why we prefer to roast them.
- Mayonnaise: Full-fat or light mayonnaise will work, but stay away from the no-fat mayonnaise.
- Mustard: Nothing fancy, just regular yellow mustard.
🔪 How to make spicy deviled eggs
Bake bacon and sliced jalapenos at 400 degrees until the bacon is crispy and the jalapenos are caramelized and soft. If the jalapenos are getting done before the bacon, remove them from the baking sheet and finish baking the bacon. Chop both the bacon and jalapeno slices.
Create a traditional deviled egg filling by placing the egg yolks, mayonnaise, mustard, red wine vinegar, sugar, a pinch of salt and pepper into a medium bowl.
Note: A food processor can be used if prefered.
Using a fork or hand beaters, mash yolks and other ingredients together until the mixture until smooth.
Add in all the jalapenos and ⅔ of the chopped bacon into the egg yolk mixture. Stir until well combined.
Fill the egg white halves with the filling mixture. One of the easiest ways to fill deviled eggs is by putting the filling into a large ziptop plastic bag, pastry bag or piping bag. Cut off the corner of the bag and squeeze the filling into each half. This step can also be done with a small spoon.
Arrange bacon jalapeno eggs on a platter. Top with a jalapeno slice and/or green onion along with extra bacon pieces if desired. So quick and easy to make this fun twist on traditional deviled eggs!
👨👩👧👦 For a crowd
These are a great party appetizer, but since the bacon can get soft after being in the filling too long, it’s best to prep parts ahead and then assemble.
Ahead of time it's best to bake the bacon and jalapenos and chop. Then cook the eggs, cool in an ice bath, remove the peel, and take the yolk out of the hard-boiled eggs. Last, mix up the filling, minus the bacon and jalapenos.
No more than a couple hours before serving stir the chopped bacon and jalapenos into the egg yolk filling. Fill each of the hollowed egg whites with the filling, then top each half with an extra jalapeno slice and chopped bacon, if desired. Place eggs on a platter for serving.

Deviled eggs should be stored in a single layer in an airtight container. Either an egg keeper or airtight container with a flat bottom can be used.
The important thing is to line the bottom of the container with paper towels to absorb the condensation. However, if the paper towel is textured, the texture will imprint itself onto the egg.
Deviled eggs last 3-4 days in the refrigerator, however the bacon in these spicy jalapeno deviled eggs gets soft after storing. It still tastes great, but that crispiness is gone.

Spicy Jalapeno Deviled Eggs (With Candied Bacon!)
Equipment

Ingredients
- 3 pieces bacon preferably thick-cut
- 2 teaspoon brown sugar
- 2 medium jalapenos sliced
- 12 hard boiled eggs peeled
- ½ scant cup mayonnaise
- 2 teaspoon yellow mustard
- 2 teaspoon red wine vinegar
- ⅛ teaspoon sugar
- salt and pepper to taste
Instructions
- Preheat oven to 400 °. Line baking sheet with tin foil or parchment paper.
