This beef roast seasoning is full of savory, salty, herby flavors that will easily elevate any cut of beef. We use it on our favorite Crock Pot Chuck Roast recipe and a similar seasoning in our go-to Slow Cooker Tri-Tip Roast, but you can use it in any pot roast recipe the whole family likes.

🤤 What does this seasoning taste like?
This dry rub is a bold, savory mix that packs plenty of the classic pot roast flavors! It's a delicious blend of garlic, onion, black pepper, and thyme, with a hint of smokey paprika in the background.

Most other recipes require that you dig through your spice cabinet for all kinds of things - garlic powder, brown sugar, celery seed, onion powder, corn starch, bay leaf, sea salt... it's too much!
This delicious dry rub simplifies the whole process by using a steak seasoning mix that already has most of the flavors you need. Full measurements are in the recipe card below.
- McCormick Grill Mates Montreal Steak Seasoning (affiliate): This is the seasoning we love to use and have used for 15+ years! You can substitute this with another steak seasoning, just be sure that it includes dehydrated onion, garlic, kosher salt, and pepper at a minimum.
- Dried thyme: This gives the steak seasoning a little help with herby flavor.
As a funny side note, there is also a McCormick Slow Cooker Savory Pot Roast Seasoning Mix, but we actually prefer the steak seasoning. Even in our slow cooker recipes. 🤷♀️
🥣 How to make pot roast seasoning
Simply combine the two ingredients in a bowl and you’re done! You can also pop it in a jar and give it a good shake.
You can use this pot roast seasoning on any cut of roast beef, but I highly recommend a chuck roast because they are affordable and yield very tender meat. We've never used it on a pork roast or lamb, but it would probably work great.
🧂 How to season pot roast
Drizzle your pot roast with olive oil and sprinkle it with 1 tablespoon of seasoning mix per 1 pound of meat. This recipe makes enough seasoning for a 3 pound roast.
We cook ours with beef stock in the crock pot for the best roast!
🌶 Variations
Feel free to change it up to make your own delicious seasoning blend!
- Add extra rosemary or thyme
- Add a bit of spice with red pepper flakes
- Add a bit of sweetness with 1 teaspoon of brown sugar
- Add fresh herbs instead of dried
❄️ Storage
Store the pot roast seasoning in an airtight container in a dry, cool place for several months at least.
🙋 Questions and answers
To add flavor to a pot roast, use a blend of garlic, onion, salt, and rosemary to generously season the meat. You should use about 1 tablespoon of dry rub per pound of beef roast to add lots of flavor.
You should season your pot roast before searing it. When you sear it, it will help the seasonings bloom and become even more flavorful.

If you season your pot roast the day before, it should stay in the fridge wrapped tightly in plastic wrap. Pot roast should not stay out of the fridge overnight or longer than 2 hours, according to the USDA.

Ingredients
- 2 tablespoon steak seasoning (We use McCormick Grill Mates Montreal Steak Seasoning)
- 1 tablespoon dried thyme
Instructions
- Combine ingredients in a small bowl.2 tablespoon steak seasoning, 1 tablespoon dried thyme
- When ready to use, sprinkle beef roast with 1 tablespoon of seasoning for each pound of meat.
