This Crispy Oven Roasted Parmesan Potatoes Recipe produces super crunchy spuds that are packed with flavor, making them perfect for Sunday dinners or holiday meals. But they’re easy enough to whip up on a weeknight too! Made with baby potatoes and a generous sprinkle of Parmesan cheese, it’s no wonder this recipe is a TikTok favorite!

We’re obsessed with crispy oven-roasted potatoes, especially when they’re coated in parmesan cheese. And the best part? No need to slice up each potato!

Roasted Potato Ingredients

This recipe only requires a few ingredients! Ingredient quantities are in the recipe card below, but here are a few noteworthy tips.

Yukon gold and red creamer potatoes, butter, parmigiano reggiano cheese, salt and Italian seasoning on countertop.
  • Baby Potatoes: Also known as creamers, red potatoes or Yukon gold varieties are best. Fingerlings also work well.
  • Parmesan Cheese: Freshly grated parmesan is our favorite, but you can use the pre-grated kind from the refrigerated section (the one that looks like sand). Just skip the stuff in the green can.
  • Butter: This is where the flavor magic happens - don't skip it!
  • Italian Seasoning: Use a store-bought mix or make your own (see recipe card). We're fans of the Trader Joes brand.
  • Salt: Kosher salt is our go-to.

How to make crispy parmesan potatoes

Preheat the oven 425ºF. Cut the little potatoes in half long ways.

If grating your own cheese, place chunks in the bowl of a small food processor.

Pulse until the cheese looks like fine grains of sand.

Add the grated cheese to a small bowl and add in melted butter and seasonings. Stir with a fork until well mixed.

Using a knife, spread a bit onto the bottom of each potato and place cheese side down in a single layer in the bottom of the baking pan.

Place on the middle rack of oven for 25-30 minutes until deeply golden brown, sizzling and potato is tender and tested with a knife.

You are looking for tender potatoes with a crispy edge.

Variations

These are amazing as is, but it is also fun to try different flavor variations:

  • Fresh herbs: Finely chopped rosemary, sage, thyme, or parsley would be delicious.
  • Dried seasonings: A teaspoon of garlic powder and/or onion powder for a punch of flavor.
  • Dried herbs: Although we call for a variety of dries herbs, choosing a single favor like oregano, thyme, marjoram, or basil would be tasty as well.

Storing & reheating

Once the potatoes are at room temperature, store in an airtight container in the refrigerator for up to 7 days.

Reheating in the oven is the best way to maintain crispiness. Place potatoes in oven at 425ºF on a baking sheet for 10-15 minutes or until warmed through.

FAQ

Can I make these crusted potatoes ahead?

Yes! These can be made ahead, left at room temperature up to two hours, and popped back into the oven at 425ºF for 10 minutes. We love doing this when making large batches of steaks or even prime rib roasts.

Can I use other potatoes?

The best potatoes for this recipe are red or Yukon gold baby or creamer potatoes. If the potatoes are too big the inside will not be done before burning the cheese mixture. Try these smashed potatoes if your potatoes are on the larger side.

Tips and tricks

  • Use really good parmesan cheese -either in the tub (deli area) of the grocery store or grate a block in the food processor.
  • While some recipes call for sprinkling the mixture in the baking dish, we found that for the best coverage to spread the parmesan mixture on each potato.

  • 1.5 lbs baby potatoes
  • 1 cup grated parmesan cheese **see note
  • 3 tablespoon butter melted
  • 2 tablespoon Italian seasoning
  • 1 teaspoon kosher salt

Instructions

  • Preheat oven to 425℉. Cut potatoes in half long ways.
  • If grating parmesan cheese, place in food processor and pulse until texture of fine sand.
  • In small bowl combine the grated cheese, butter, and seasonings.
  • Use a knife to spread a bit on the bottom of each potato and place in the 9x13 pan.
  • Place in oven on the middle rack for 25-30 minutes. Look for them to be deep golden brown, sizzling and potato is tender when tested with a fork.
